If you’ve waited this long, don’t worry; I just updated myself. I'm trying to update to ios 6.1.6 on iTunes 10.7, it's telling me I need to "upgrade" to iTunes 11, which I won't do. Presume if I were to update the iOS on the iPod, I would lose the ability to sync with iTunes 10.7, so no updates for me.
Infuriating how much Apple doesn't "get" how the features in iTunes 10 that were taken away for 11 might upset a power user.

No. You need iTunes 11.x.x.
Yes, iTune 10.7 or later supports iOS 6. For iOS 7 you would need 11.1 or later.
