what is documents and data on the iphone?

You said above that Documents can be any document created by an app you use, etc. Data can be email, game scores, app support files.

If I turn off all option of my icloud account except documents and data there is supposed to be backup all of my documents under photo stream and camera roll because they are app and created documents like image/picture. Isn't it? And another question to you that

does yahoo email backup to icloud as data on my iphone?

The only way to get rid of them is to restore your device as new. However, if you restore from a backup then you may end up with the same state you have now.
