How do you disable Smart Links in Text Messages?
Whenever a day or time is mentioned, it is underlined and links to scheduling in your calendar. I want to disable this, how do I? Or is there an app that would give me this option?

There is no setting to disable this feature. Only option is to just ignore the underlined text.

Not that I am aware of. Again, your best solution right now is to provide feedback to Apple to let them know you would like to see that setting. Nothing that any of us here can do. Go to www.apple.com/feedback and click on the appropriate link.
iOS 8 updated and still no option to disable Smart Links. Apple doesn't listen to /feedback. They're useless.
There would not be an app that would have access to the Messages API. Another messaging app may not treat the links the same, I'm not sure. However, most of the messaging apps require the other users you are communicating with to have the app as well. Your only option at this point is to follow what TJBUSMC1973 provided you.
No, the links have existed for some time, and I agree, I don't find it changing anytime soon either. From what I can tell it was added to assist in creating calendar entries, and it will also do the same with a phone number. It allows you to just tap on it and make a call.
The purpose of Smart Links is obvious. For phone numbers, it makes sense. Phone numbers rarely appear in messages, and when they do, you usually need them. But to underline every single mentioned of any type of day or time…is beyond absurd.
Wouldn’t expect them to remove it, or invest time in different options for when they appear, but to not have a toggle for something like that, is typical Apple garbage.

Personally, I just ignore the underline unless I need it. And unless/until Apple provides an option to disable that function, that's what you'll need to do as well.

No, there are no mods for the Message app on the iPhone.
You can use a different message app from the App Store if you like.
Just updated to 7.1
