Q: Can I redeem and iTunes gift card and then choose not to use to for specific purchases for work?
I received some iTunes gift cards but also use my id for work purchases. Can I redeem my gift cards and then choose not to use them for specific purchases?

No, when you have a balance on your account it will automatically be used up first, you can't chose how items are billed. From http://support.apple.com/kb/HT5582 :
When making purchases, content credits are used first, followed by Gift Certificate, iTunes Card, or Allowance Account credits; your credit card or PayPal account is then charged for any remaining balance.
If you want things to be billed to the credit card on the account then you could try gifting the items to yourself - I haven't tried gifting to myself but I think that it should work (you can't use a balance for gifting, only a credit card).
