TextEdit Font and Save

I am very confused!

I open a text file and I begin to edit it. If I press command+q...it doesn't ask me if I want to save my document. It saves it automatically for me.


I think this should NOT be the default. Is there a way to change this?


Also, I have set in the preferences the documents to be "plain text" Now I know what plain text is but if I begin to type and I insert a single quote the system converts it to a curly quote. If I have set the font to be plain text everything should be plain text.


I like to have my TextEdit set to 100% plain text. How do I do that?


I like vi but it is funky and TextEdit can do a better job, if it is supposed to do what I think it should do.
