I am unsure how a document on Keynote or Pages can just 'disappear'? Is there any 'restore' button on iCloud that I'm just not seeing?

No, but you can restore from a previous backup if you've been regularly backing up your device.
What do you mean a previous back up? Keynote saves automatically and it was a work in progress so it wasn't stored anywhere else.
Then I'm sorry, but you've likely lost the work.......
