I'm trying to purchase an iPhone 5s in South Africa. There are no Apple stores in South Africa, and I'm therefore unable to purchase AppleCare through any store here. If I were to purchase the iPhone here but the AppleCare protection online, would coverage differ in any way?

Sorry, but Apple does not offer AppleCare in South Africa, so you won't be able to purchase it even online from Apple. No authorized reseller in any other country will ship to you, and if you find a private seller, you won't be able to register the plan in South Africa.
