How can I add contacts to pages from contact book?

Nearly 100 features present in Pages 09 are missing in 5.1. You mention merge fields. Don't forget

- bookmarks

- hyperlinks to other parts of a document

- 2-up page view (I.e., ability to see 2 pages side by side for layout)

- ability to set alternating left/right margins, and left/right headers and footers (that lack makes pages useless for books, brochures, etc.)

- ability to see comments while editing

- ability to print comments

- ability to drag in hyperlinked text from a browser

- ability to set default zoom

- meaningful AppleScript and Services support

- search/replace invisibles

- status bar with word count, page count

- ability to deal with rtf (TextEdit) files

- ability to make non-continuous text selection

Etc., etc.

In addition to the deficiencies, there are also multiple bugs, including the inability to export hyperlinks to a PDF reliably. In short, as one early reviewer of Pages 5 put it, an "unmitigated disaster."
