Every time I start/restart my Mac Pro it asks for my FaceTime password. How do I stop this or better yet disable FaceTime completely? This is a Mac Pro running Mavericks 10.9.1. It doesn't even have a camera.

Launch FaceTime. Then use the FaceTime > Preferences... menu command. Set the FaceTime slider to "OFF". Then quit FaceTime.
BTW, your Mavericks 10.9.1.is out of date. Download and apply the OS X Mavericks 10.9.2 Update (Combo).

How can I disable facetime on a mac mini. I am running OS X 10.9.3.
The preference is being greyed out.

Did you ever get a fix for this? I have a Mac Pro with no camera. I keep getting calls on FaceTime. I can't change the preferences because they are greyed out.
So I can't turn FaceTime off. I may have to delete the app.
