Does iCloud backup store my Exchange credentials? And, if so how well are they encrypted?
All of my passwords seem to be restored when I use my iCloud backup to restore my iPhone, So I guess they have to be saved somewhere in the iCloud backup...
Can i turn this feature off?

The link you provided doesn't answer whether Exchange credentials are backed up by iCloud or not.
Sure it does. It tells you what's stored in the iPhone backup. If you don't see exchange Passwords mentioned in the article then the answer to your question is no. Pretty simple...
But in fact it does. Try it. Setup an Exchange account, backup, reset and restore. Your Exchange account is restored without having to re-enter a password, which must mean it is saved in iCloud. But it seems Apple doesn't disclose this.
