It sounds like you are unable to read your Mail in the app because they they are disappearing. I recommend starting starting by closing the apps that are running:
iOS: Force an app to close

Double-click the Home button.
Swipe left or right until you have located the app you wish to close.
Swipe the app up to close it.
When you have done that and restart the phone and test the issue again:
iOS: Turning off and on (restarting) and resetting

I just set up a new email address - Mail - Add Account - Other (I didn't get an option for IMAP or POP, so not sure what the default is). Everything connects fine and downloads the email, but they disappear after about a minute.
I had this problem since upgrading to IOS 7 and on different email addresses too. I thought it might be the email server's problem, so I just switched only to find the same thing is happening.
I took the phone to an Apple authorized store and they tested it and said "nothing was wrong", but clearly the issue is with the phone - or more likely the operating system since it wasn't doing this before the upgrade.
I've read some things about changing the Date/Time and such but nothing has fixed it. Definatley not a quote issue or "remove after 30 days" either since it's only there for a minute.
