Removing contacts and emails

How come when I start typing someone name in my email or when I go to make a call you still people that you have deleted from you phone in gray. Even people that I have emailed 1 time. How can I clean all that up. It kinda like a history that needs to be deleted.

That data is in a cache, that's not directly accessible, on your phone. It will be overwritten, as you use your phone. If you want the data gone now, you'll have to restore the phone as a new device, NOT from backup. Follow this by syncing your content back to the phone.
