Q: How to set up Airport Extreme behind another router?

I have Verizon FIOS and because of the layout of my apartment building, the modem is centralized in the networking room causing my apartment to be forced into using a Verizon router as well due to our FIOS TV service. With all my devices connected, the factory router alone is severely underpowered. What would be the best way to set up an Airport extreme behind my FIOS router? Is there a specific setting that would get me the best speed or latency even though the signal is traveling through two routers?
