I have Apple Care for my 2012 Macbook Pro - Is there anyway I can upgrade my mac through apple?

AppleCare doesn't cover that. You need to use Apple's recycling program or sell it to someone else and put whatever you get towards a newer one.

If you want to trade UP, your only remedy is to convert your current macBook pro into CASH, then use the cash to buy a model that you like better.
Apple has a program, but they rightly refer to it as a recycling program. You can do much better with a current model through a Private sale.
