That is not an option in my mail version.

If your profile is correct you are running 10.6.6, you should update to 10.6.8 You want to be running Mail 4.6 or above (4.6 is the latest for Snow Leopard 10.6.8)

This is a large update which will update Mail. You will need to restart your computer after, then run software update to bring everything else up tp date.
you can run that update and it should cause no problems.
