The stock mail app doesn't have a spam icon.

I downloaded my yahoo mail app, which does have a spam blocker.

You can't on your iPad. You'll need to check with your email provider and see if they have a spam or block list on their server for your account. Many providers do, usually configurable through their web interface, though not all.
