Deadline for buying Macbook Pro with upgrade?

I'll be in NYC 19-28 of March and need to buy a Macbook Pro with upgraded memory, processor.

This equipment can be found on the Apple Store? I need to ask in advance if you can do the upgrade? What better way to purchase this equipment for the period I'll be in NYC?
