There are previously purchased songs on my iPhone 5. I already have show all music and iTunes Match off. All I need to do is delete these songs but when I swipe left, the option to delete is not there. These songs do not appear in my iTunes library on my Macbook, only on my phone. How can I get these songs off my iPhone?

Have you tried syncing with iTunes?
I have it automatically synced with my iTunes library, yet they still aren't going away.
Connect to iTunes, select the phone from devices, go to the Music tab and uncheck sync music then sync.
This should remove all the music on the phone.
You can also delete all the music here:
Settings > General > Usage > Music > Edit > ➖ > Delete
