I do not have Remote Desktop, but keep getting the Software Update offers. How do I make them stop?

You don't, permanently. In some versions of OS X you can ignore a given update, but the next time an update is released you'll be presented with that new update. Just allow the system to install the Remote Desktop Client update. There's no harm in it and it will then stop bugging you.
