What if I don't want an update because every time I update the Epson printer software the printer wont work, so what should I do if I don't want thr update. Apple keeps reminding me?

Ignore it. Nobody if forcing or requiring you to update.
You can turn off the Auto update, Auto update search system on your Mac. It is is System preferences, Software Update.
Just uncheck these boxes.
Then you can run Software Update manually and select which updates to install or not to install.

Yes, you do, Go to Systems Preferences, click and look at fourth line down, four across. It may depend on the exact OS you are using. Incidentally, it may help if you used the combo updater and updated to 10.6.8.

and follow with software updates to pick up the most recent security and iTunes updates. There could be seven of them!
Then it is in another section. I forget what it was listed under with Snow Leopard but those same options are there someplace.
Oh, and uncheck 'download updates automatically. Why don't you talk to Epsom?
