I purchased Protectstar's iShredder Pro a while back. Today it was removed from the App Store. From what I gathered at the Protectstar's site they have removed all programs that erase securely. Why?

No one here would know. We are only users here in a tech support forum. Apple has not made a statement as to why and the Terms of Use state that we don't question, speculate about or discuss in any other fashion Apple's product or business decisions.
Secure erase may be built into the OS X operating system, but iShredder Pro was an iOS app. To date, iOS doesn't have a way to selectively securely erase temporary files and app data. One could perform a 'Erase All Content and Settings' operation through the iOS Settings app, however, that erases all device data and resets it to factory defaults.
Maybe because the apps are useless. Secure erase is built into OS X.
That application's true name is DockShredder and is developed by Pierre Hennequart, not Protectstar
