What, exactly, do you mean by "un backup"? Do you want to delete your existing backups? If so: iTunes>Preferences(under the Edit menu in Windows)>Devices...highlight & delete here.
My phones memory is nearly full but I dont have many apps. my other on itunes is huge and I dont know why? I was one time having problems with my phone and might have backed up my phone to the compter. my memory was full ever since. a friend of mine thinks it could be because of the backup?!

A large "other" section indicates corrupt files.
A restore shouls resolve.

Other that large is corrupt data. To fix, you'll have to restore the phone. You can first try restoring from backup, followed by syncing your content back to the phone. This sometimes fixes the issue, but if it doesn't, you'll have to follow the instructions here to restore as a new device:
If I restore my phone will all my app, photos and contacts disappear? I dont want to lose everything :S
I did it yesterday by goung through I tunes. It all came up on screen and I did as it said. Download latest itunes and then it will guide you
You should be keeping everything on your computer. If it is not there, then put it there.
