Playlists/Play Count Not Syncing From iPod To Itunes

I've had a lot of trouble with my iTunes in regards to it restoring my whole music library setting me back a whille. I've now noticed my iTunes isn't syncing play counts or playlists between my iPod. E.g. A playlist I create on iTunes won't go on to my iPod. So frustrated, Apple keep on letting me down.
