Restoring iPod

I don't want to restore my iPod because I don't want the apps and other data I had saved back on it again. I still want my music though. If I start a new iPod, can I transfer my music back onto my iPod without having to transfer the apps and notes and what not back onto it as well?
Or will I totally have to start from scratch and rebuy all of my albums?
