If it were me, I would always take a high resolution COLOR image raw, jpg, etc. and convert to BW in an image edting app, you can also do this in iPhoto.
The reason being, I can convert any color image into a black and white image but cannot easily turn a BW image to color. I've also found, that I sometimes like the color version better...

My understanding of RAW is: when you take a photo in RAW mode, all the information from the sensor is recorded, whilst information, such as white balance, is tagged data.
I would suggest that if you want to shoot in RAW, you use either Canon's own software or Adobe Raw if you have Photoshop/Photoshop Elements.
iPhoto can import and edit RAW images but it does not have any RAW-specific editing capabilities.
If you have recent versions of Photoshop/Elements, you can import your images directly into iPhoto, and set your preferences in iPhoto: Preferences: Edit Photo: Photoshop (or Photoshop Elements). The Adobe RAW utility should open automatically if you open a RAW file.
My opinion on RAW is that it requires extra work and it isn't necessarily appropriate in every situation. The choice is yours.
As for black and white images, I would shoot in colour - RAW or high quality jpeg - then convert to black and white in an image editing program such as Photoshop/Photoshop Elements.
