How can I prevent my airplay from disconnecting. I'm using the mirroring option and it keeps kicking me off and defaulting to the original setting of it being off.

That would indicate a network issue.
Make sure router is up to date. Reboot. If on wifi try ethernet.
Go to istumbler (Mac) or netstumbler (PC) to get a report of your network, it will help see if there's interference.
