How can I play old Apple System 7 games on a new imac?

I would like to play some of the old games that I loved thirty years ago when I bought a Mac SE. My kids loved Cairo Shootout, Mille Bourne, Birds, and the old Rogue (still have the floppy!).

Is there a straightforward way to do that, without violating the Apple license agreement?

Classic Environment was a Mac feature that would let you run Mac OS applications but was limited to OS X 10.4.11 maximum.

You can get an older Mac at a reasonable price to run these old games in native Mac OS. Beware that some old

games will not play on PPC machines and require Macs with 030 or 040 processors.

Even Classic wasn't that great in terms of games. John Madden 2000 had to use software acceleration to work at all, and it did not support CD swapping games like Riven. An open source version of Riven application was later made for Mac OS X. You are best off dealing with Macs that can boot into Mac OS 9, over those that use Classic.
