So I made a new Apple ID, and I made a new Game Center ID knowing I couldn't use my old one. Now my Game Center keeps switching to my old Game Center ID, How do I stop this??

Go to Settings > GameCenter and sign in with the Apple ID you wish to use.
I do, but have to do this almost 5 times a day because it keeps going onto my old account without me logging it in
Try logging out of Settings > iTunes & App Stores (or logging in there with the same Apple ID you use for GameCenter) and see if that makes a difference (test to see if they are linked some how.
In the end, you could try resettings all settings and/or restoring the iOS, but you might want to call Apple first to see if there is a link somewhere that is causing it to flip back to the other Apple ID.
