iTunes can't sort track lists on iPhone

Wow. iTunes 11 is really unpleasant in many ways. Here is but one:

Connect iPhone 4s running current version of iOS7.1. Click 'On this Phone'.

See all those songs? The default sort order is by song title. If you want to group it by artist, which would be a much more helpful display of the musical contents, you can't do that. Clicking on the column headings does nothing.

I would pay $100 for a third-party app that just lets me add the music I want to my phone from either my home or work computers. iTunes is that frustrating.
