I am looking into developing an app for the App Store and my question is regarding Apple's 30% in app purchase fee. If my application is free to download, but requires my user to purchase a monthly subscription, will Apple collect a 30% fee every month that user is billed? Any in-app purchases are subject to the 30% withholding.

No way around it.

Amazon purchases are physical items (not digital) and do not go through in-app purchase so they are exempt.
