When I set in the preferences the photos to be scaled to fit the display, the photos I import seem to get scaled down to half screen size.
What I'd like is to ask the software to do is to fit all photos to the screen so the longest dimension fits.
Can I do this...? At the moment I'm scaling by hand and there are 200 slides to do and more to come!

Size the images befor placing in Keynote to match the size of the slide size set in:
Inspector > Setup > Slide Size
You can use a batch image size application such as Downsize or do this or an automator in Photoshop.
Create an image in keynote just like you want it and note it's size or dimensions after you have it sized. Make a separate copy of the images you want to size so you don't re-size the originals. Then use Preview to size all of those images to the size needed. You can do this all at once by selecting all the images and bulk size them in Preview. Then as you create your presentation just drop them in as needed and they will already be sized properly.
