How do fix broken thumbnails in iTunes PDFs?

In the Books tab of iTunes, under PDFs, I have several PDFs with the first page of the PDF as the thumbnail. Some of these PDFs, however, are either missing thumbnails or displaying it incorrectly. What can I do to refresh the thumbnail or force it to correctly display the first page from the PDF?
