If you mean larger files such as Movies or even large numbers of Documents and Pictures I would suggest moving them to an External disk - this will be a Copy function - and then delete them on the Hard Drive.
In the case of Music linked to an iTunes Library you can move the whole Library then tell iTunes to use the External Drvie version (Check this works before deleting the version on the Mac's Internal Drive.
The same can be done for iPhoto's Library.
This will slow down searches of items within those libraries.
If you mean Apps you don't use that are third party (non Apple ones) Uninstall them according to the suppliers instructions.
After that I would not delete Apple App myself due to the way they tend to be integrated.
Messages will not work if the Contacts app is missing for instance.
Screen Savers and third party System Preferences panes tend to be relatively small as to no be worth worrying about.
