I have changed my Apple ID and password but iTunes continues to use my old email address to which I don't have a password.

I have changed my Apple ID and password but I cannot access iTunes which continues to use a previous id for which I do not have a password

Is this on your iPad or computer's iTunes ? If your iPad then tap on your id in Settigns > iTunes & App Store and log out of it and then log back in with the updated version of your account. If your computer's iTunes then you can sign out via the Store > Sign Out menu option and that will then change to Store > Sign In option
