Is there a keyboard shortcut for the alt or option symbol ⌥ and the command symbol ⌘? I need this a lot to take notes from tutorials etc. I know I can copy them from other text or access the special character menu, but I would love to have a easier shortcut.

Since Apple ⌥ and ⌘ shortcuts are not built into OS X keyboard shortcuts,
you can make your own shortcuts. Something like this...
System preferences > Keyboard > Text
Replace keyboption With ⌥
(Tip: when you get to 'With',
press Control-⌘-Space}
You can try making one for yourself via system preferences/keyboard/text/symbol and text substitution
There are no keyboard shortcuts for option and command symbols.
You can add to favorites from character palette.
