it has automatically put in an incoming email server host name, but when I click to add the address it is telling me that the server is not responding. Help!

The host name is the incoming mail server. The setup will place a default server for this section but you can change it to the correct incoming mail server.
You should be able to get the correct incoming and outgoing mail servers from your email provider. Contact them.
