iCloud app backup, storage, data

If I turn off the icloud backup for my apps one by one, does it delete the data on them i.e. Photos and emails, or does it just stop backing them up in case something happens to the device?

I just need more room on my device and my backup storage is already full so I thought I could just stop backing it up...thanks for any help!!
