This summer my family is visiting Barcelona (Spain), Lisbon (Portugal), and Prague (Czech). I am wondering if there is a provider out there that has data coverage for a month for all 3 destiniations with unlimited data? Any help would be appreciated.

I can only speak to the way Verizon handles this. They used to have an very high limit international data package. I think a max of 2gb of data. per month. That has now changed so their is a fee for each 100mb of data.

Depending on which iPad you have, if you have the unlocked GSM AT&T model, you can purchase sim cards in those countries from some of the carriers so you avoid the high roaming charges.
I have a first gen 3G model iPad. I used it in Paris, Rome and London in 2011 by purchasing a SIM from the apple store and it worked great. I was just wondering if there is a company that has coverage to the 3 countries I am travelling to this year, without the need of buying sepeare plans in each country.
Generally, I expect that you will need a SIM for each country. Even where companies operate across different nations, they keep their businesses separate, so that they can gouge tourists with roaming data charges. Get a Pre-Pay SIM from each country, and throw it away when you are done.
