Set up a few lines of text the way you want them with tabs and by manually changing the bullet type (format sidebar, "Text" tab, "Bullets & Lists").
Then highlight the lines and click the dropdown menu next to "Bullets & Lists". A dropdown list will appear. Theres a "+" sign you can click to add your own style which will match the lines of text you just created.
You can also hover over an existing style and a grey arrow will appear, which you can click and choose to update that style instead.
Sorry for the confusing description. Its really convoluted and poorly designed.

iWorkHi,
I have created a "bullets" style to exactly how I need it with fonts, sizing, etc. Unfortunately, every time I type out the specified text and click on the Bullets style that I made, it does not apply the bullets.
How can I fix this?
Thank you!
