Just backed up my iPad to my computer including all of the apps and I ran my iPad as new for a day, only to realise that I may have lost all of the songs I have recorded on garage band. When I download the backup will my sessions be restored with it?

Yes, your backup should include your GarageBand projects. An iTunes backup does include all application documents, see: http://support.apple.com/kb/HT4946
If you have saved shared your GarageBand projects to iCloud, they should still be in iCloud.
