I have a G5 imac, 17". I have used my 10.4 discs to wipe the machine as I want to install 10.6 on it. The 10.4 disc is still in it as that's what it boots from after being wiped. How can I eject this disc to put the 10.6 one in

You cannot install Snow Leopard on a G5. Snow Leopard requires an Intel Mac. A G5 is a PPC Mac.
You can't install 10.6 on it. Use the 10.4 disks to install an OS, restart normally, and press the keyboard's eject key just after the chime.

An Intel Mac isn't a G5. Eject the Mac OS X 10.4 DVD as described above without installing it.
