If I were to take my old iPhone 3GS to Apple, in very good condition, would it be replaced with a newer model?

No. You're welcome to buy a new phone. Some stores offer a trade in to recycle the old one, but it doesn't amount to much, especially for al older phone like a 3GS.

Assuming it's an unlocked 16GB iPhone 3GS in perfect condition, you'll get about £22 for it. You could probably sell it outright for more than that. A new 5s starts at £549.
Its 32 GB Black iphone 3GS in pretty good condition with a few minor scratches. I'll take it to my local Apple Store & see what they say.
