This past weekend, whenever I click on anything in Youtube it just loads endlessly - the video never comes up. Netflix still works, it is only Youtube. Also when I try to mirror Youtube from my ipad to my AppleTV it doesn't load either.
Any ideas?

It sounds like the YouTube app on your iPhone is not loading videos. I recommend following the steps in the article below for an issue like this (you can skip the step to install another app from the App Store because it is not relevant to the issue you described):
