Here is a list of the most current iOS for each iPod Touch:
iPod Touch 1st generation - iOS 3.1.3

iPod Touch 2nd generation - iOS 4.2.1

iPod Touch 3rd generation - iOS 5.1.1

iPod Touch 4th generation - iOS 6.1.6

iPod Touch 5th generation - iOS 7.1
