My wifi is grayed out on my iPhone 4S. I've tried resetting the network twice, putting in airplane and do not disturb mode and then turning off and on again, and nothing seems to help. I cannot do my iOS upgrade unless I have wifi.

If these don't work you probably have a hardware problem. Visit an Apple store for an evaluation or contact Apple Support.
Maybe there's sometihng wrong in your Phone's WI-FI Chip so you should take your Phone to Apple
try searching solution in youtube.. i fixed my greyed out wifi there by heating it with a blow dryer 3 inches directly in the 3.5 jack for 3-5 min and and when notification that iphone is too hot, shut it down, or power it off then, put it in the freezer for about 5-10 or so, then viola.. 🙂 works for me hope this will work for you...
*advice to put iphone in a zip locked cellophane before puting it in the freezer
