If your goal is to delete all songs from your iPhone, you can do that very quickly as follows:

While your iPhone is plugged in to iTunes on your computer, go to the "Music" tab behind the iPhone's summary tab in iTunes and uncheck the "Sync Music" checkbox. Then click "Apply" in the lower right.

If your goal is less drastic, you can select which songs to sync using iTunes on your computer, then sync only those songs.
