On Pages '09 every time I try and put a closing quotation mark it turns around into the open direction e.g. ‘test‘

As soon as I hit space, so I end up with quotes looking like this: ‘test‘ - new documents it works fine, but just in this document. If i try and copy and paste the text into a new doc the problem persists, and I can't retype cause its a 5000 word essay which I still have to write another 5000 words in. I have no clue what to do, any help would be appreciated!

You should be able to use Find and Replace feature in Pages 09.

If that doesn't work try pasting into Textedit, do the corections and save as rtf text. Open that document in Pages and see if it works.
