The location of the Thunderbird profile is /Users/<username>/Library/Thunderbird/Profiles.

However, an easier way to get to your profile folder in Time Machine is to install Thunderbird in your Applications Folder, run it the first time, and default folders should be created. Then, go to Help > Troubleshooting Information and click the Show in Finder button next to Profile Folder. With the new default profile folder open in Finder, enter Time Machine and see if it'll take you back to your actual Thunderbird profile with all your mail.
