How can I stop the emails?

Those are receipts. You may need them in the future.

Still, I buy frequently and there's already enough coming into my inbox as is... is there anyway to disable them?
Afraid not.
If you had a problem with any content purchased from iTunes on your iPhone, that email contains a, "report a problem" link.
Never know when that may come in handy.
