is the macbook air 128GB big enough to load important programs?

Today I went to the apple store in Shanghai to look at purchasing the 11' macbook air.

They didn't have a model running with the 128GB hard drive...and when I inquired further, they mentioned that the 128GB version wasn't big enough to run the apple demo smoothly - (which features larger programs...I believe they were final cut, adobe premiere and microsoft office suite to name a few).

I basically thought the 11' version could be perfect for my new job, as it is light as a feather and I thought powerful enough to run the programs I need.

I want to run Microsoft Office 11 pro (with outlook), Nuance Dragon Dictate, Quickbooks 2011 (or later), and Sibelius 6.

I figure I can use an external thundrbolt drive to store photos, and keep my videos/music to a minimum...

Thoughts would be greatly appreciated.
